Stage 1: Wort preparation

Grain is mashed (or sugar wort prepared) as the fermentation substrate.

Stage 2: Fermentation

Yeast (S. cerevisiae or Pichia) ferments the wort in 250–500 m³ tanks.

Stage 3: Recovery

Yeast and/or the target recombinant protein are separated from the broth by centrifugation.

Stage 4: Distillation / protein purification

For spirits — a rectification column; for protein — chromatographic purification.

Stage 5: Drying/formulation

The protein is spray-dried; spirits are brought to commercial strength.

Stage 6: Fill & serialisation

Beer/spirits are filled or the protein is packed; the batch goes to QC.
