Brewing and distillation are the world's most mature, high-volume fermentation industries (the
global beer market ≈800B USD; typical beer ABV 4–6%; fermentation in 5–10 days; ethanol yields >90% of theoretical). Today their infrastructure is being reimagined as a
bioeconomy platform: giant fermentation tanks of 250–500 m³, tuned yeast platforms
(*S. cerevisiae*, *Pichia pastoris*) and distillation become CDMO capacity for recombinant
proteins (collagen, egg albumin, dairy proteins) and biochemicals. AB InBev, through its BioBrew
unit, already runs its plants as contract platforms for high-tonnage protein production. The
synergy is ready infrastructure (bioreactors, purification, logistics) repurposed from alcohol to
bio-ingredients.

#### Stage 1: Wort preparation
Grain is mashed (or sugar wort prepared) as the fermentation substrate.
