Food-grade enzyme platforms

Enzyme preparations made by fermentation with engineered production strains and used as processing aids in food — an established, regulated market: China's GB 1886.174-2024 in force since August 2024 and at least 74 EFSA opinions.

1 · What it gives

Food enzyme preparations are added to specific food streams for a technological purpose in place of relying on process conditions alone. The route is fermentation of an engineered production strain, downstream concentration with germ filtration, and formulation. The framework is established rather than exploratory: China replaced GB 1886.174-2016 with GB 1886.174-2024 (issued 2024-02-08, in force 2024-08-08), and the EU has issued at least 74 scientific opinions on food enzymes.

D1Biochar made by clean pyrolysis of crop, forestry and processing residues — used as a soil amendment and sold as durable carbon removal — instead of open burning, dumping or landfilling of those residues
Replaces: Open burning of straw, husks, shells and prunings; dumping and landfilling of processing residues; traditional earth-kiln charcoal making …
AGROCHEM
D1Fermentation (stainless and single-use bioreactors, solid-state reactors) and downstream equipment (centrifuges, filtration, spray and fluid-bed drying, formulation) for local production of enzymes, microbial products and fermentation ingredients instead of chemical-synthesis plants and imports
Replaces: Chemical-synthesis routes and imports for the products in FI-, FD-, I- and A-series articles (enzymes, organic acids, vitamins, microbial …
EAC
D1Food and market organic waste treated by black soldier fly (BSF) larvae, composting and bokashi fermentation instead of landfilling, open dumping and incineration of wet waste
Replaces: Landfilling and open dumping of food/market waste (methane, leachate, vectors); incineration of high-moisture organic waste; chemical fly …
SERV
D1Pulp bleaching with xylanase enzyme pre-bleaching and ECF/TCF processes (oxygen, peroxide, ozone) — instead of elemental chlorine bleaching; with biological effluent treatment
Replaces: Elemental chlorine (Cl2) and hypochlorite bleaching of kraft/sulfite pulp; reduces chlorine dioxide demand in ECF
CHEM
D1Recovered phosphorus (struvite and other recovered phosphates from biological wastewater and digester streams) instead of fertilizer made from cadmium-bearing phosphate rock
Replaces: A share of DAP/MAP/superphosphate made from mined phosphate rock; chemical P-removal with iron and aluminium salts at treatment plants …
AGROCHEM
D1Baking enzymes (fungal amylase, maltogenic amylase, xylanase, glucose oxidase, lipase) plus ascorbic acid instead of potassium bromate and azodicarbonamide as flour treatment agents
Replaces: Potassium bromate (KBrO₃) and azodicarbonamide (ADA) used as oxidizing flour improvers/dough conditioners; part of chemical emulsifier use …

3 · How to implement 4 steps

  1. 1
    Fermentation
Prepare the production strain and run submerged fermentation at set pH, temperature and aeration.
  2. 2
    Scale transfer
Transfer seed-fermentor contents aseptically into the main fermentor.
  3. 3
    Recovery
Concentrate the enzyme liquid and apply germ filtration to remove residual production-strain cells.
  4. 4
    Formulate and package
Standardise to the target activity and formulate with food-grade ingredients.

European Union

In the EU, Regulations (EC) 1331/2008, 1332/2008, 1333/2008 and 1334/2008 harmonise evaluation, and every food enzyme needs a safety evaluation before reaching the market. EFSA evaluations assume manufacture under Regulation (EC) 852/2004 with HACCP and GMP. In Australia and New Zealand, permitted enzyme preparations, including GM sources, are listed in Schedule 18 of the Food Standards Code through an FSANZ application (A1267 in the sources).

China

In China, food enzyme preparations are governed by GB 1886.174-2024, the national food safety standard for food additives — enzyme preparations for the food industry.

7 · Tech stack & innovations

Main risks from the sources: allergenicity — EFSA opinions note that allergic reactions cannot be excluded — and, for engineered production strains, proof of genetic-modification safety and absence of production-strain DNA in the products.
